HSM/Food Science Nutrition Concentration

The Health Services  Management /Food Science and Nutrition concentration will be active beginning on November 17, 2018.  

ADMISSIONS CRITERIA

  • Accepted applicants must meet the minimal criteria of Norfolk State University.

  • Departmental criteria for entering the professional phase of the Bachelor of Science in Health Services/Food Science and Nutrition concentration.
  • Students who apply for admission to the FSN concentration must have a minimum of a 2.7 GPA.
  • Must have completed all of the Pre-Professional requirements.
  • Students must earn at least a "C" in all supporting courses, including Math 250 or its equivalent; BIO 165, BIO 165L; BIO 166, BIO 166L; CHM 221, CHM 221L; CHM 222, CHM 222L; BIO 310, BIO 310L; CHM 312, CHM 312L; and BIO 469, BIO 469L.
  • Application Deadline is March 1, 2019.

FSN Program Mission

The mission of the Food Science and Nutrition (FSN) Concentration is aligned with the mission of the University.  Offering a supportive academic and culturally diverse environment, the Food Science and Nutrition Concentration prepares students for supervised practice leading to eligibility for a verification statement and for the Commission for Dietetics Registration (CDR) credentialing examination.  The FSN Concentration also prepares students to meet the Didactic requirements as defined by the Accreditation Council for Education in Nutrition and Dietetics (ACEND) in order to be successful food science and nutrition professionals in diverse communities and a variety of workplace settings for the 21St century.

Goals

  1. The program will prepare graduates for ACEND accredited supervised practice program to become a registered dietitian nutritionist.
  2. The program will prepare graduates to meet the Didactic components defined by ACEND.
  3. The program will produce competent graduates to work in food, science and nutrition related fields.

Program Objectives for Goal 1

  • The program’s one-year pass rate (graduates who pass the registration exam within one year of first attempt) on the CDR credentialing exam for dietitian nutritionists is at least 80%.  
  • At least 80% of program students complete program concentration/ degree requirements within three years (150% of the program concentration length).   
  • At least 60% of program graduates apply for admission to a supervised practice program prior to or within 12 months of graduation.
  • At least 50% of program graduates are admitted to a supervised practice program within 12 months of graduation.  
  • At least 80% of program graduates will have a grade point average of 2.7 or above.


Program Objectives for Goal 2

  • All students who complete the Didactic components as defined by ACEND, will receive a verification statement.  
  • Eighty-percent of supervised practice program directors will be satisfied or very satisfied with graduates’ preparation for supervised practice.


Program Objectives for Goal 3

  • Eighty-percent of graduates will indicate that they were satisfied or very satisfied with their academic preparation in food, science, and nutrition. 
  • Eighty-percent of graduates will agree or strongly agree that their education prepared them for food, science and nutrition related employment.

Curriculum


Information to Prospective Students and the Public:

To become a Registered Dietitian Nutritionist, students must:

  1. Earn a Bachelor’s degree (at minimum);
  2. Complete a Verification Statement from an ACEND-accredited Didactic Program in Dietetics;
  3. Complete a Verification Statement from an ACEND-accredited Supervised Practice Program, or Individualized Supervised Practice Pathway (ISPP);
  4. Pass the Commission on Dietetic Registration Examination for Dietitians.
  5. Follow appropriate state laws that regulate the practice of dietetics.


The Bachelor of Science Degree (BS) in Health Service Management/ Food Science and Nutrition Concentration is designed for:

  1. Students who are pursuing a degree in Health Service Management and who want to enter supervised practice to become a registered dietitian nutritionist.  Verification statements are issued to students once degree requirements are successfully completed.
  2. Students who already have an undergraduate degree and are seeking to complete the Food Science and Nutrition Concentration requirements to obtain a verification statement.  Students must earn at least a “C” (or better) in all professional and supporting courses, including MTH 250 or its equivalent; BIO 165, BIO 165L; BIO 166, BIO 166L; CHM 221, CHM 221L; CHM 222, CHM 222L; BIO 310, BIO 310L; CHM 312, CHM 312L; and BIO 469, BIO 469L.


To earn a DPD Verification Statement from Norfolk State University, students must:

  • Earn a Bachelor’s of Science degree in Health Service Management/ Food Science and Nutrition Concentration.   
  • Students who already have an undergraduate degree and are seeking to complete the Food Science and Nutrition Concentration must get their undergraduate transcripts evaluated to see if undergraduate requirements have fully been met.  Students must then complete all didactic courses with a “C” or better in all professional and supporting courses.
  • Maintain an overall GPA of 2.0 or higher and earn a "C" or better in all professional and supporting courses, including MTH 250 or its equivalent:  BIO 165, BIO 165L; BIO 166, BIO 166L; CHM 221, CHM 221L; CHM 222, CHM 222L; BIO 310, BIO 310L; CHM 312, CHM 312L; and BIO 469, BIO 469L. 
  • Complete all required DPD coursework approved by ACEND.


Verification Statement

The Didactic Program in Dietetics (DPD) verification statement verifies completion of educational requirements and is required for application to: accredited supervised practice programs, active membership in the Academy of Nutrition and Dietetics, and state licensure/certification.

All students who successfully graduate from Norfolk State University with a Bachelor of Science degree in Health Service Management/ Food Science and Nutrition receive a verification statement. Non-degree seeking students who desire a verification statement must notify the DPD Food Science and Nutrition Program Director of planned DPD completion date and provide official transcripts for review.

Applying for supervised practice program/dietetic internship:  Completion of DPD requirements and issuance of a verification statement does not guarantee acceptance into a supervised practice program/dietetic internship. Individuals must apply through a competitive application process for acceptance into a dietetic internship program.
